Socca flatbread & Pesto (GF,DF,V)

The chickpea batter will not thicken very much after 2 hours.If your chickpea flour tends to have lumps you may 
want to sift it.

(I modified the recipe a little bit.I added 1/4tsp of turmeric and 1/4 tsp of dried Rosemary.As I didn't have a skillet I improvised and it needed 15-20 mins in the oven.)

Pesto

  • 1 cup organic  green peas (steamed)
  • 4-5 basil leaves
  • 1 clove of garlic
  • 2tsp Apple cider vinegar
  • 2 pinches of salt
  • 1/2 -1 tbsp of water as needed
  • a little black pepper
  Blend well in a food processor or as I like to do it ,with a blending wand.Spread on socca bread when just out of the oven.

Ewalie gluten free knäckemix (GF,DF,V)













Follow the instructions at the back of the packet.I find it  doesn't need the 2tbsp of olive oil
 I just add 1tbsp.Spread out as evenly as possible so that it bakes evenly.
Below are the spices I like to add to 1 packet.


Usually I'm not a big fan of flax crackers,the ones I've made in  the past were very crumbly, stuck in your teeth and sometimes gave this "gone off " smell when the were cooking.

They are really easy to make,nutritious, filling (without making you feel uncomfortably full) and not to mention absolutely delicious(and organic which is definitely a plus ♥ ) .
